ERYNGIUM variifolium

Striking and sculptural, Eryngium variifolium (Moroccan sea holly) forms a low rosette of leathery, spiny leaves distinctly marked with pale, netted veins, and sends up stiff stems topped with steel‑blue, thistle‑like flower heads in mid to late summer. Best in full sun and very well‑drained soil, it thrives on light, sandy or chalky ground and copes with low fertility, making it ideal for sunny gravel borders and dry spots in Irish gardens. Once established it is drought tolerant, and its long‑lasting blooms are highly attractive to pollinators; good drainage over winter is essential.
